Alta Langa is a high hill region bordering the Ligurian Apennines, in southern Piedmont. Thanks to a unique research project, supported by the main producers of sparkling wine and the Piedmont region, vineyards with Pinot Noir and Chardonnay were planted here from 1990 in an environment ideal for creating high-quality sparkling wine, produced according to the traditional method of bottle fermentation.

This technique is well known in Piedmont – the birthplace of Italian sparkling wine – and has been used for nearly two centuries.

With the aim of faithfully interpreting the uniqueness of the elements that express the character of each vintage, Alta Langa’s regulations only allow the production of “millesimato” versions – that is, the year of the harvest must be indicated on the label.

The wine bears the name Airali, after the hill on which the vineyards are planted, located in the municipality of Cissone (CN) at an altitude of about 600 meters.

The characteristics of this terroir are perfectly expressed in this wine, in which we have tried to fully convey the essence of our vineyard.

The grapes are placed whole in a pneumatic press. After separating the free-flowing juice, the must from the subsequent press cycles is fermented (at a temperature of 18°C) to produce the base wine.

In March after the harvest, the wine is bottled for its second fermentation and then left to age on the lees for at least 36 months. During dégorgement, the liqueur d’expédition is added.

In the glass, the wine shows a straw yellow color and a fine, persistent mousse. The aroma is pronounced and intense, with delicate notes of bread crust, nuts, dried figs and honey. On the palate, it is flavorful, with pleasant acidity that enhances the tasting experience, combined with a refined minerality that emphasizes its great elegance.

Serving temperature: 6-8°C.
