The vineyards of Blue Chakra are located in a beautiful area called “Canale di Pirro,” on the slopes of the Itria Valley, a vast karst landscape in the heart of the land of the Trulli, the so-called Murgia, which connects the hills with the Adriatic Sea. This area, situated between 300 and 400 meters above sea level between Alberobello and Castellana Grotte, is known for its immeasurable beauty. Here the karst phenomenon has resulted in a beautiful substrate.
The soil under the canal is red, rich in clay and limestone, with a rich texture. Not far from the vineyards, the limestone rock emerges along with plant roots nestled in the karst crevices.
The climate is typically Mediterranean, determined by the tempering effect of the sea and the fresh winds that come through the channel from the Murgia hills, making for long, dry and sunny summers. Summers are not without some precipitation. The average thermal trend is characterized by below-average temperatures with strong daily temperature variations.
The grapes are harvested by hand early in the morning and immediately brought to the winery, where they rest overnight in the cellars. This method allows cold pressing with precise and delicate extraction.
The grapes are then gently pressed and stemmed, after which the must is fermented in stainless steel vats at controlled temperature. At the end of fermentation, after initial settling, the wine remains on fine lees until February and ongoing bâtonnage diffuses volume and flavor.
In February, the “liqueur de tirage” is added to the wine for secondary fermentation, after which the bottles are bottled and sealed with a crown cap. The bottles are then placed in the dark at an average temperature of 12-15°C to complete secondary fermentation.
At the end of this process, the wine remains “sur-lie” in bottles for 12 months. Now Blue Chakra Sur Lie is ready. Unlike the Champenoise method, there is no dégorgement, the process by which the sediment is removed from the bottle. “Sur Lie” leaves the yeasts in the bottle, giving us a cloudy, dry and harmonious wine with yeast deposits at the bottom.
The color is pale straw yellow and veiled, as is normal for sparkling wines made in the same way. The creaminess of the bubbles further emphasizes its savory flavor, which lends character to the wine and communicates its terroir.
