The vineyards of Chakra’s Essenza are located in the beautiful area “Canale di Pirro,” on the slopes of the Itria Valley, a vast karst landscape in the heart of the land of Trulli, the so-called Murgia, connecting the hills to the Adriatic Sea. This area, located between 300 and 400 meters above sea level between Alberobello and Castellana Grotte, is known for its priceless beauty. Here the karst phenomenon has provided a sublime substrate.

The soil under the canal is red, rich in clay and limestone, with many stones. Not far from the vineyards, the limestone rock meets the plant roots that meet the karst spots.

More than 100-year-old vines are planted as small trees, modified with 2 branches and a short fruit head.

Early in the morning, the grapes are harvested by hand and brought directly to the winery, where they rest overnight in the cellars. This method allows cold pressing for precise and delicate extraction.

Some of the grapes are harvested a few days before ripeness, giving the “Pied de Couvè” to ferment the rest of the grapes with autochthonous yeasts. One-third of the grapes are vinified with skin maceration.

After fermentation, the wine remains on fine lees for one year, with continuous bâtonnage to promote volume and flavor. Then the wine is aged in bottle for another 6 months.

Giovanni Aiello’s Chakra Eccenza has a beautiful pale yellow color with greenish reflections.

The wine has a fruity bouquet, with particular notes of peach, almond and medlar. On the palate it has a good structure, soft and fresh, with fine citrus notes on the finish. The wine also has some tropical notes.
