The vineyards of Giovanni Aiello’s Chakra Rosato are located at an altitude of 300 to 400 meters above sea level, between Putignano and Castellana Grotte, an area known for its priceless beauty. Here the karst phenomenon has led to an extraordinary underground environment. The soil is clayey, calcareous and rich in fossils but not very deep. Not far from the vineyards, the limestone rock emerges, along with plant roots nestling in the crevices of the karsts.
The climate here is typically Mediterranean, influenced by the soothing effect of the sea and the fresh winds that flow through the channel from the Murgia hills, making for long, dry and sunny summers. The average temperature rarely hovers above 30°C or below 0°C. In summer, temperatures rarely fall below 18°C.
Harvesting takes place early in the morning and the grapes are harvested by hand and taken directly to the winery, where they rest overnight in the cellars. This method allows for cold pressing, which ensures a precise and delicate extraction while limiting tannins. Accordingly, the grapes are gently pressed and destemmed and remain in contact with the skins for only a few hours. The must then ferments in stainless steel tanks at controlled temperatures.
At the end of fermentation, the wine remains on fine lees until February with constant batonnage to develop volume and flavor.
Giovanni Aiello’s Chakra Rosato is very fruity, with notes of red berries, cherries and raspberries. There are also (Mediterranean) spicy notes and a refreshing minerality. The Chakra Rosato has a wonderful body with a certain fullness and structured tannins.
