Aedes’ vineyards are located at an altitude of 650 meters on the Contrada Muganazzi (Castiglione di Sicilia), the northern slopes of Mount Etna. The grapes are harvested by hand in mid-September, carefully selected and then brought to the winery in shallow crates, where they are gently crushed. Fermentation takes place in steel vats at a temperature of 20°C. The wine then matures for another 6 months in steel vats followed by 2 months in bottle.
The wine has a bright yellow color.
Floral notes emerge in the nose, accompanied by hints of citrus.
On the palate, the wine presents itself dry, fresh and mineral, with striking versatility.
