The grapes come from vines up to 90 years old and are harvested manually around mid-October. Selected grapes are brought to the winery in shallow crates. Here they are crushed after dehulling about 80% of the clusters. Maceration takes place for 12 days in steel vats at a temperature of 25-28°C (77-82°F). Malolactic fermentation in tonneaux follows. The wine matures in used (⅔) and new (⅓) tonneaux for a minimum of 36 months. Finally, it is followed by 24 months of aging in bottle.
The wine has a ruby red color.
The nose is ethereal and intense with hints of ripe fruit and tobacco.
The pallet is elegant and harmonious with quite a long finish and pleasant tannins.
This Etna Rosso is very food-friendly and can be paired with many different dishes including grilled or roasted white meats.
