The grapes of iCustodi’s Saeculare come from vines up to 250 years old and are harvested manually around mid-October. After selection, the grapes are carefully brought to the winery in shallow crates. Here they are stripped of about 80% of the clusters and gently crushed. Maceration takes place for 12 days in steel vats at a temperature of 25-28°C. The wine then undergoes malolactic fermentation in tonneaux. Aging takes place for a minimum of 36 months, both in tonneaux and in bottle.
The wine shows a ruby red color.
On the nose, it is ethereal and intense, with hints of ripe fruit and tobacco.
On the palate, the wine presents itself elegant and harmonious, with a considerably long finish and pleasant tannins.
