The ripe grapes are harvested by hand and sent whole with the stem to the tank. Fermentation takes place at a temperature of 16-18 degrees in steel tanks over a period of about 15 days. The wine remains in the tank for a period of time to macerate and refine on the fine lees before bottling.

In the nose, there are aromas of wild flowers, citrus and bitter almonds.
The taste is velvety and long on the finish.
Ideal with Sicilian vegetable caponata.
