On the steep slopes of the municipality of Cembra/Lisignago, 600 meters above sea level, the grapes are carefully grown using the simple Trentino pergola and Guyot method. With a yield of 70 hectoliters per hectare, the grapes are strictly harvested by hand and collected in crates, preserving their integrity until pressing.
The 2021 harvest was disgorged on Oct. 10, 2023. Vinification begins with gentle pressing of whole grapes, with a maximum yield of 55% must. About 10% of the cuvée matures on wood and undergoes malolactic fermentation, while the remainder is fermented on stainless steel. This is followed by 24 to 30 months of bottle aging, which contributes to the wine’s complexity and finesse.
In the glass, the wine shows straw yellow with light green reflections and a fine, persistent mousse. The aroma is refined and intense, with notes of yellow fruit, hazelnut and a hint of bread crust. On the palate, it is clean and balanced, with a long, lingering finish.
