First, the grapes of this Rosso Piceno “Trufo” are picked by hand in mid-September. They are then destemmed and pressed. This is followed by a long fermentation with skins in steel vats for 15 days. Followed by délestage and aging in the barriques for 2 years. Finally, the wine is refined in the bottle for 6 months.
Ripawine’s Rosso Piceno has an intense ruby color with purple hues and dense arches.
The nose is very intense with hints of ripe red fruits such as blackberries, blueberries, currants and jam.
In the mouth it is round, full and warm. The high alcohol content can be perceived but the tannins present are tempered into a pleasant softness. Finally, it has a good persistence and in the aftertaste there is a clear aromatic resemblance to the olfactory sensations. This has led to high ratings from, for example, Gambero Rosso and Luca Maroni.
The Rosso Piceno “Trufo” pairs well with spicy foods, roasts and cheeses.
