Rujno Rosso is made from Merlot with a small proportion of Cabernet Sauvignon. It is a strict selection from Rosso Gravner, produced only in the best years, when the grapes and vintage fully bear the extra time and ambition.
The wine ferments for five weeks on the skins in open oak vats, with native (wild) yeasts, with no temperature control. It then ages for four years in oak barrels, followed by another 12 years of bottle aging before release. It is bottled without clarification and without filtration, during a “waning moon,” in line with Gravner’s rhythm of nature and time.
The vintage was very mild, with moderate rainfall during the summer. The rain in the fall allowed the grapes to develop an optimal level of noble rot (noble rot). Last day of harvest: Wednesday, Oct. 12.
