The Sovernaja is produced from the Verdacchio grape, a grape variety that is completely extinct except in Federico's vineyards! As of 2019, Federico and oenologist Andrea have made their first and worldwide only 100% Verdacchio wine. Tasting such an exclusive wine is a great experience for any wine lover.

The grapes are destemmed by hand with a selection of whole grapes. Fermentation and maceration on the skins take place 50% for 30 days and 50% for 6 months. Then the wine is aged for 1 year in concrete tanks and another 1 year in bottle. The entire process, from the field to winemaking, is carried out without the use of energy, i.e. completely manual.

The wine shows golden reflections on a straw-colored background.

In the nose, notes of peppermint and cedar peel stand out, with hints of medicinal herbs such as marjoram and oregano.

The wine emerges subtly on the palate and then develops into a decisive and lively sip, in which the pronounced acidity is enveloped by a savory and material volume.

Terre di Sovernaja

Terre di Sovernaja, located in the heart of Tuscany below the picturesque village of San Gimignano, is a farm run by owner Federico Montagnani with the help of winemaker Andrea Pizzolato. Both are good friends of ours. In the past, Terre di Sovernaja was known for their high-quality olive oil and saffron, but today Federico and Andrea produce clean natural wines that reflect the region's unique terroir.
