Vinification

The grapes are destemmed manually with a selection of whole grapes. Fermentation and maceration on the skin, 50% for 30 days and 50% for 6 months. Aged for 1 year in concrete tanks and 1 year in bottle. The entire process from the field to winemaking is carried out without the use of energy, i.e. entirely by hand.

Colour

Golden reflections on a straw background.

Nose

On the nose, peppermint and cedar peel stand out with hints of officinal herbs such as marjoram and oregano.

Taste impression

It enters the mouth subtly and then expands into a decisive and lively sip in which the pronounced acidity is enveloped by a savory and material volume.

Culinary advice

The Sovernaja goes well with oysters, seafood & various pastas.

The Great Hammersma

“Incrocio. Sounds exotic but means nothing but crossing. And not from two highways, but in this case from two grapes. Result of some experiments in the 1930s. Place of performance: The Italian Ministry of Agriculture. There, Professor Bruni believed that crossing sauvignon blanc and verdicchio could lead to interesting whites.

And damn it; it worked. Dried green apples and mandarin, fresh spice, see-through lime, fine grapefruit bitters and a breath of saltiness. Have another drink, but then watch out when crossing the road.”
