The Valpolicella Classico Superiore “Maghi” from Cà Dei Maghi is extracted from vineyards situated in Monte Santoccio, in the picturesque municipality of Fumane. The grapes are picked by hand and then undergo a rest period of about 40 days before being pressed. This traditional drying technique, known as “appassimento,” allows Paolo to obtain lightly dried grapes infused with rich polyphenolic compounds. Finally, the wine matures for 36 months in large barrels.
After vinification, the Valpolicella “Maghi” presents itself with a deep ruby color, accompanied by vibrant purple reflections that enliven the glass. The olfactory profile of the wine is extensive and elegant. Initially, aromas of ripe red fruits and compote of strawberries reveal themselves, followed by refined balsamic notes of anise and wild fennel.
At the first sip, the wine embraces the mouth with a refreshing envelopment, supported by soft elements and balanced by lively, precise tannins.
