First of all, the Valpolicella Classico Superiore Ripasso “Canova” is made from fresh grapes and amarone ripasso. To clarify, these are both from the same vineyard. Finally, the wine matures in large barrels for 48 months.
In the glass, this wine from Cà Dei Maghi has a ruby red color with light garnet reflections.
The aromas of this Ripasso 10 anni consist mainly of ripe fruit.
On the palate, this Ripasso “Canova” has great finesse and elegance with hints of cherries and blueberries. Yet this wine is sometimes visceral and sober. Basically, this is a heraldic Ripasso made from a few freestanding vines.
Firstly, because of its great taste, this excellent wine can be combined with a wide range of dishes. But it is best combined with special dishes that take time and passion, such as long-cooked meat.
