First of all, the Valpolicella Classico Superiore Ripasso “Canova” is made from fresh grapes and amarone ripasso. To clarify, these are both from the same vineyard. Finally, the wine matures in large barrels for 48 months.
In the glass, this wine from Cà Dei Maghi has a ruby red color with light garnet reflections.
Examples of the aromas of this wine are ripe fruit, macerated flowers in spirits, black olive, wild mint, cinchona and rhubarb… In short, these are just a few examples that come to mind when we talk about this wine. Most importantly, this is a wine that comes from the heart.
On the palate, this Ripasso “Canova” has great finesse and elegance. Yet this wine is sometimes visceral and sober. Basically, this is a heraldic Ripasso made from a few freestanding vines.
Firstly, because of its great taste, this excellent wine can be combined with a wide range of dishes. But it is best combined with special dishes that take time and passion, such as long-cooked meat.

This Canova ripasso also has elegance and light-footedness as its signature . Not too sweet cherries, rhubarb softened with some strawberries, ripe plums, dried black olives, a bourbon flavor, the sweetness and smokiness plus the acids that function as crush barriers.
