Vinification

From the vineyards located in Camparsi in the municipality of Fumane come the red grapes used to produce the first vintage of this Valpolicella Ripasso Classico. Cà Dei Maghi has decided to dedicate a label to Camparsi vineyard grapes. This is to distinguish them from the grapes from the vineyard on Mount Sant’Urbano. This decision was made with a view to reinforcing an idea that Paolo Creazzi and his family have always held dear, that of “CRU” (high quality vineyard) wine. The grapes used for the Valpolicella Ripasso Classico are freshly picked by hand. In addition, the Amarone Ripasso grapes from the same vineyard are also used. Finally, an aging takes place in small barrels for 24 months

Colour

The brilliant and ruby red color in the glass portends a fresh and elegant wine. But the color does not neglect the richness and structure that characterize the name of this wine.

Odor

On the nose, this wine from Cà Dei Maghi reveals notes of slightly wilted red flowers. Like wild violets and rosehip.

Taste impression

In the mouth, the wine enters in a delicate, broad and dry way. It is full of lively and elegant tannins, accompanied by light hints of berries in the finish. Finally, there is an excellent final taste that gives great persistence in the mouth.

Culinary advice

Given its medium body and fruity and sweet notes, the Valpolicella Ripasso Classico is ideal to drink while eating red meat from the barbecue, for example. For vegetarian dishes, combinations with spicy and aged cheeses, risottos and pronounced vegetables are excellent options.
