Vinification

The vineyard used to produce Vino della Stella Fiano di Avellino DOCG Riserva is located in Località Boschi in the municipality of Lapio at an altitude of 550 meters
meters above sea level and is less than a hectare in size. The soils consist of a limestone-clay matrix and face southeast.
The particularly suitable soils and cool, continental climate allow Fiano to mature while retaining its proverbial freshness and refined expressive elegance.
Harvesting is usually done manually in mid-October, when the grapes reach full technological and phenolic maturity. Then the grapes soften
pressed; The must is left to macerate on the skin for a few days and alcoholic fermentation begins in steel vats. The wine completes its aging on the fine lees of the yeast for at least a year and completes its evolution in bottle before being released to the market.
