Nebbiolo is undoubtedly known for its production of outstanding red wines, whose characteristics have been appreciated since the 1900s, even in its traditional, austere form. At the time, however, it was extremely difficult to find wines that could age well. To address this problem, the grape was also used to produce sparkling wines, often with a noticeable residual sugar to make them more pleasant and soften the distinctive, tannic impact on the palate. This version is represented by this cuvée, obtained from grapes harvested in the vineyards of San Rocco in Alba.

The wine is made from Nebbiolo grapes that are fully crushed in a pneumatic press, while the must is carefully protected from oxidation. After a short maceration period on the skins, the free-flowing must is fermented in stainless steel vats at a temperature of 16°C for at least 6 months. Bottling for a second fermentation in April after harvest is followed by aging in bottle for 18 months, after which disgorging takes place.

The color resembles that of pale onion skin with golden highlights.

The bouquet is rich with aromas of roses, dried flowers, dried fruits and bread crust, with hints of plums at higher temperatures.

Full, harmonious and particularly savory on the palate, lively and pleasant with excellent structure and long-lasting persistence.
