Profumo di Vulcano begins its journey on a small vineyard that dates back to the late nineteenth century. The land extends over about half a hectare on the northern slopes of Mount Etna, at an altitude of 600 meters above sea level, in the district of Feudo di Mezzo. This area, located in Passopisciaro, a picturesque hamlet in the municipality of Castiglione di Sicilia, offers shelter from strong sirocco winds and a summer daytime temperature of around 28°C. These unique conditions contribute to slow ripening of the grapes, allowing them to best develop their flavor and complexity. The vineyard is home to vines that average 100 years old, some even predating the nineteenth-century phylloxera plague. Here we find the best native varieties of Etna, including Nerello Mascalese and Cappuccio, Alicante and Francisi, along with a handful of white vines. It is a garden of grapes that perfectly reflects the essence of this land.
The grapes are hand-picked in late September or early October. Spontaneous fermentation takes place in open oak barrels, without temperature control, using native yeasts. The wine is then aged for 24 months in both new and used tonneaux, followed by another 6 months of aging in bottle.
The wine has an intense ruby color, deep and translucent.
Raspberry and wild blueberry aromas are followed by subtle hints of citrus, Mediterranean herbs, orange, tangerine, marjoram and myrtle. Over time, the wine reveals itself further, with notes of sweet spices, sandalwood and pipe tobacco. Rich and deep in flavor, yet nimble, with lively tannins. The finish is complex, with a salty-sweet sensation that highlights the wine's personality and perseverance.
