The Crete, an Offida Passerina from Ripawine, pays homage to the rich history of the Passerina grape, which has its origins in the ancient Trebbiano family. This grape, long in the shadows, has recently experienced a resurgence thanks to passionate winemakers like those at Ripawine who have rediscovered and exploited its potential.

The name Crete refers to the clayey soil on which the Passerina vines thrive, as clay is known as "cretoso" in the local dialect. It reflects the unique terroir characteristics that give this wine its distinctive character.

At Ripawine, the grapes for the Offida Passerina "Crete" are harvested by hand and then carefully destemmed and crushed. After gentle pressing, only the free-run must is used. Fermentation takes place in vitrified cement tanks at controlled temperatures between 13 and 15 °C. After fermentation, the wine undergoes a period of preservation on fine lees, with repeated batonnage enriching aroma, flavor and depth. Finally, the wine is refined in bottle for 4 months.

The Crete exhibits a straw yellow color with green reflections, characteristic of its youthful vitality.

On the nose, this wine reveals a bouquet of fruity aromas, including apple and banana, accompanied by delicate floral notes such as lily.
