Sangiovese "Moro Matto" Organic I.G.P.

The grapes for the Sangiovese "Moro Matto" are hand-picked in mid-September from Ripawine's carefully selected vineyards, chosen based on various factors such as age, exposure, soil type, altitude and limited yield. After picking, the grapes are destemmed and pressed. Some of the grapes undergo cold fermentation (15°C) in vitrified cement tanks, while the rest, including the skin, ferments in steel vats for 10 days. After fermentation, the cold fermented portion is left on the fine lees in cement tanks, where repeated batonnage is carried out. The other part is refined in barriques before bottling. Finally, the two parts are reassembled in the bottle, after which the wine refines for another six months.

The Sangiovese "Moro Matto" has a ruby red color with purple hues.

The wine's aroma is very intense, with clear hints of red fruits such as strawberries, cherries and sour cherries. Notes of chocolate, coconut and coffee are also present.

The palate is full-bodied and soft with very persistent sensations of ripe red fruit.
