Roberto's daughter, Valentina, excels in several disciplines, being an excellent student, athlete and musician. The name of this wine, "Pervale," is an amalgamation of "Per" and "Vale," the pet name for Valentina, and represents "for Valentina" as a dedication of Roberto's first wine to his daughter.

The grapes are carefully picked by hand and then placed on a conveyor belt that uses gravity to guide them to the de-stemmer. Here the leaves and stems are removed before the fruit goes to a filtering machine that gently breaks the skin to release the juice as the grapes fall into conical stainless steel tanks. Temperature-controlled fermentation begins, with the juice being pumped over the grapes every 6 hours. After a 2-week period, the grapes are gently pressed, after which the wine is aged for 12 months in half-new and half-used French oak barrels, followed by another 12 months in bottle.

Pervale presents itself with a deep and intense ruby color. The nose is complex and intense, with aromas of peach, cassis, chocolate and spicy vanilla oak. The wine is well structured with nice acidity that reflects the terroir, and has a long and well-defined finish that complements the rich flavor experience.
