After the grapes are harvested by hand, they are gently pressed. The must undergoes a 40-day fermentation in cement tanks. The wine is then aged for 10 months in concrete and steel tanks, followed by another 1 year in bottle. This white wine has a straw yellow color. In the nose, the wine has salty aromas with spicy notes of rosemary and oregano, accompanied by light influences of pear and citrus. The taste is fresh with hints of minerals and flowers. Serving temperature: 10-12° C
Terre di Sovernaja
Located in the heart of Tuscany below the picturesque village of San Gimignano, Terre di Sovernaja is a farm run by owner Federico Montagnani with the help of winemaker Andrea Pizzolato. Both are good friends of ours. In the past, Terre di Sovernaja was known for their high-quality olive oil and saffron, but today Federico and Andrea produce clean natural wines that reflect the region’s unique terroir.
